<strong>ABSTRACT. </strong> Garlic Oil is widely used as a raw material for fragrances with volatile active compounds at room temperature. It easily affected by environmental changes and this problem can be solved microencapsulation using coacervation methods to protect compounds. was encapsulated gelatin sodium alginate coating materia glutaraldehyde the crosslinking agent. The purpose of research study effect composition polymers mass garlic oil on encapsulation characteristics. resulting microcapsules were analyzed digital microscope, SEM, FTIR, efficiency. result showed that have an irregular shape textured surface. FTIR spectrum indication allicin content in microcapsules. efficiency 34.23% yield 29.43%.
